Ring of Fire chillies are a Cayenne-type. They are normally available from July to November and are the best source of early season heat. Chop them into curries or Thai dishes.

Storage
Fresh chillies keep for a couple of weeks in the fridge. All chillies freeze well and slicing and pickling is another way to preserve chillies.
