Another classic, mild-heat, American/New Mexican chilli. Originating from New Mexico and often referred to as the Hatch chilli when grown in the Hatch region these chillies are named after the Californian city of Anaheim. Traditionally they are used green and the skin is removed. They are typically stuffed and battered or used as a base for salsa or mole.

Storage
Fresh chillies keep for a couple of weeks in the fridge. All chillies freeze well and slicing and pickling is another way to preserve chillies.
