Spicy Mango Coronation Chicken Sandwich

Spicy Mango Coronation Chicken Sandwich

Makes 2 massive sandwiches, 4 picnic portions

You’ll need:

• 400g cooked chicken, shredded - leftover roast works best

• 4 tbsp mayo

• 2 tbsp Greek yoghurt - stops it being too rich

• 2-3 tsp mild curry powder

• 2 tbsp South Devon Chilli Farm Mango Chilli Sauce, plus extra for drizzling

• 1 tbsp mango chutney

• Handful sultanas, soaked 5 mins in hot water then drained

• 2 spring onions, finely sliced

• Tbsp of Fennel Seeds chopped

• Salt & black pepper

• Thick-cut white bloomer, 4 doorstop slices, buttered

Quick method:

1.  Mix the sauce: In a bowl, stir mayo, yoghurt, curry powder, mango chilli sauce, and mango chutney. Taste it - add more chilli sauce if you want proper heat.

2.  Build the filling: Fold in chicken, sultanas, spring onions, and fennel. Season well. Chill 15 mins if you’ve got time - the flavours get better.

3.  Stack it: Butter your doorstop slices. Pile the coronation chicken high on two slices, add an extra drizzle of that mango chilli sauce, then top with the other slices.

4.  Picnic ready: Press down lightly, wrap tightly in beeswax wrap or foil. Cut in half just before serving so it doesn’t go soggy.
